Scone Rocks 'CCNT Apple Cider Coated Sweet Gel'

~ Oat n Coconut Scones cross Rock Bun with Sweet Apple Cider Top ~
‘Golden CCNT Oat Brown Rice flour Rock scones coated with Apple Cider
Vinegar Sweet Gel, served with PURE butter. What happens when you bake a scone with dough you don't need to knead? You end up with a Rock scone. This one had coconut flour and apple cider vinegar as key ingredients... Coconut edition reminded me in texture and taste; of a Spanish cake I used die over as a kid... Apple cider vinegar gives tang and sweetness without having to use vast amounts of sweetener.. These were not overtly sweet but the coating of Apple Cider Vinegar Sweet Gel really gave them a nice kick, served with a Dollop of PURE butter. Coconut flour
Oat flour
Brown Rice flour
Baking Soda
Baking Powder
Beetroot sugar
Apple cider vinegar
Eggs
PURE vanilla bean
Rice Bran oil
Oil Spray 'Rice Bran' (Link)
Purée 'Apple Red Delisc'

... Mix dry bowl - Coconut flour, Oat flour, Brown Rice flour, Baking Soda, Baking Powder, and a little Beetroot sugar. Whisk the Dry together (Easier to combine)Combine wet bowl with Apple cider vinegar, apple purée, eggs, vanilla bean and little Rice bran oil. Pour the wet mix into a dry mix well
... The dough was amazing and so full of air almost to the point of froth! Tasted good too! Grease a Texan muffin tray with the rice bran oil spray. Too easy to spoon into the Muffin tins I used to keep these scones in line...The Oven awaits, 20 minutes later, allow to cool. Mix Apple Cider Vinegar with some Beetroot Sugar and Cinnamon. If you leave this sauce overnight in the fridge it turns into a sweet gel. Brush on the Apple Cider Glossy sweet Gel and then sprinkle with Date Sugar mixed with Cinnamon
