'Baby Curry Taters Roasted with Garlic Carrot and Tuscan Kale. Served in a halo of Baby Kale, sprinkled with Chickpeas 'Smokin Paprika Roasted (Link) Cooled down with a dollop of PURE CCNut Cream. Refreshed with a glass of Iced Tea Jar 'Triple Peppermint' (Link) I just couldn't stop taking snaps of all the pretty colours in this dish no matter what light... I also devoured it all in one hit. ... What I Used; |
...Wash but don't dry the Baby potatoes and carrots. Pull out a jar of 'Smokin Paprika Roasted (Link) Half the potatoes and thickly slice carrots to same size of potato halves |
... Mix together carrots and potatoes and spread over a Baking sheet lined Pizza tray |
...Sprinkle over Garlic Flakes the top and spray over with Olive oil |
... Add the Curry Spice to mix - I used Turmeric, Ground Black Peeper, Black Peppercorns and Garam Masala. Mix together in a small bowl (I tried actual curry powder with this before ick - Don't do it!) Sprinkle the curry over the veg tray |
... Gloss over with Olive Oil again before baking for 25 minutes. Remove and then toss around |
... Pull out pre-prepared shredded Kale and sprinkle over the half roasted veg. Gloss over with more Olive oil again before baking a further 20 minutes. Meanwhile reheat in the same oven - Chickpeas 'Smokin Paprika Roasted' (Link) and further roast for 20 minutes |
... Then remove from the oven. Lay down a halo of baby kale |
... Add the Roasted Curry Veg to the centre of the halo before sprinkling with the reheated - Chickpeas 'Smokin Paprika Roasted (Link). Dolloped with PURE CCNut Cream to serve |
