Cupcakes 'Apple Cider Topped Gel Date Cin'

~ Full of Sweet Tang and Zing Cupcakes ~
‘Golden potassium rich Cupcakes made with oat flour. Apple Cider
Vinegar Cupcakes Coated in Apple Cider Vinegar Sweet Gel and Sprinkled with Date Cinn. I know Apple Cider Vinegar AGAIN!! But I'm now determined to put that amazing taste and texture into a cupcake... Although these tasted amazing still, I felt the rise and texture still required some improving... So my NEXT trial will be not using the cupcake liners for I want the bottom to have some crunch crust and I'm going to try adding baking soda for more air... Will post this attempt... ... What I Used;
Apple cider vinegar
Eggs
Rice bran oil
Purée 'Apple Red Delisc' (Link)
PURE Vanilla bean
Oat flour
Brown rice flour
Baking powder
Date sugar
Beetroot sugar
Cinnamon ground
Nutmeg ground
... Combine the Dry bowl, Oat flour, Brown rice flour, Baking powder, Beetroot sugar, Cinnamon ground and Nutmeg ground. Combine the Wet bowl, Whisked eggs, then add the Rice bran oil to mix, then Apple sauce and PURE Vanilla bean to mix. Mix in the Apple cider vinegar. Then mix the wet ingredients into the dry bowl
... Line tins and pour out batter. Baked golden 30 minutes later
...Out to cool for 10 minutes - stacked ready to coat and Sprinkle. Mix Apple Cider Vinegar with some Beetroot Sugar and Cinnamon. If you leave this sauce overnight in the fridge it turns into a sweet gel. Brush on the Apple Cider Glossy sweet Gel and then sprinkle with Date Sugar mixed with Cinnamon
