Chickpea 'Curry Spin Tom'

'Bright golden curry which is low in fat and full of bountiful superfoods and spice - made with Chickpeas for protein

... What I Used;
  • Potatoes roasted to serve on
  • Cooked or canned plain Chickpeas
  • Tomatoes
  • Spinach cut to ribbons
  • Water according to needs
  • Extra Virgin Olive Oil
  • Lemon juice
  • Mustard seeds Brown
  • Turmeric ground
  • Ginger ground
  • Coriander ground
  • Cumin ground
  • Black Mustard Seeds
  • Dash of Extra Virgin Olive Oil
... Dice up tomatoes. Heat oil on a nonstick pan and toast the mustard seeds until the aroma hits (don't burn should only take a minute or two)
... Toast chickpeas in a separate non stick pan. Add water and turmeric. Stir through
...Bring to boil and add the tomatoes. Add the ginger and stir/heat through
... Add spinach and cumin before stirring through
... Heat through and add further spice if desired. Stir through the aromatic mustard seeds, cover and simmer for 15 minutes over a low heat
...Served over roasted potatoes baked in the oven
