Not all soya cheeses are equal and there’s no point choosing one with added sugar cane and even maltodextrin as I’ve seen in some cases. You also want an organic fortified option to rule out added nasties. One of my current vegan dairy choices and favorite in both nutritional value and taste, is artisan mozzarella style from bute island, Scotland.
