CCNTbread 'Maple Van'

A sweet basic health loving staple coconut sweetbread of mine

Super moist, oil free, gluten free and slightly sweet bread full of organic coconut goodness. My favorite staple chilled mid morning with herbal tissane. This loaf isn’t high rising with yeast etc and is very much like the flatter mandal bread but super juicy and the fact its an easy stir pour and bake makes it a good staple. ✧☾ What I Used ☽✧
½ cup organic coconut flour
½ cup organic coconut shreds
2 tsp ground ginger
1 cup natural yogurt (Link)
¼ cup pure maple syrup
Pinch of Himalayan salt
1 tsp baking soda
3 eggs
Dash of organic vanilla essence
✧☾ Method ☽✧
... Combine dry ingredients
... Add the wet ingredients to center (well) and mix thorough (center to out)
... Line loaf pan with baking paper wax side up
... Pour in the batter
(my secret is to crack over a dash of Himalayan salt over the top prior to baking)
... Bake on 170 for 50 minutes
... Remove from oven and allow cooling before removing from tray (simply pull out with the ends of the baking paper)
