Muffinbites 'Cottage Vegoat'

~ Cheesy Veggie packed mini Muffin ~
‘Bite size, vibrant and cheesy vegful bites, filling made with oat
flour and moist with the juice of tomatoes. Dashed with dried ground herbs baked in paper cases. Don’t forget there’s more post Links at the end of this creation. Enjoy :D'

... What I Used;
Dried basil
Sea Salt
Cracked black pepper
Dried oregano
Oatmeal Flour
Baking Flour
Mashed cooked tomatoes or tomato juice
Water
Low fat creamed cottage cheese
Eggs
Extra Virgin Olive Oil
Skim Milk
Grated carrots
Corn kernals
Grated zucchini
... Combine all dry ingredients in 1 bowl
... Combine all veg in another and whisk eggs separately
... Add the rest of the wet ingredients to the eggs barr veg and mix well. Add the wet tomato egg mix to the dry and roughly mix
... Now add the veg and lightly stir through. Line a muffin tray with baking powder and put oven on 200. Scoop batter into baking paper cups (You can use glasses like I have here to help weigh down and shape the paper cases before adding batter)
... Bake in 30 minutes
... Nice with Red Rooibos Lemon tisane
